The big picture

One number stood out in the Spring 2025 National Coffee Data Trends report: the increase in specialty coffee consumption. While the average American’s high coffee guzzling is nothing surprising, consuming as much as three cups of coffee per day on average, specialty coffee is earning a special spot in their hearts. Between 2020 and 2025, specialty coffee consumption increased by nearly 18%, rising from 39% in 2020 to 46% in 2025.

Among all the options, espresso-based drinks (cappuccinos, lattes, macchiatos, and the like) are winning hearts. That’s not surprising, since espresso has always been a versatile staple on any barista’s menu. And while they account for fewer cups consumed overall, non-espresso-based beverages, like cold brew, also saw a 42% increase compared to 2020 levels.

There’s also no place like home. Despite the allure of opulent and radiant coffee shops, home remains the preferred spot for coffee. Whether it’s drip or instant, it doesn’t matter. As much as 71% of past-day coffee drinkers made coffee at home, a sharp rise from 63% in 2020. In tandem, the popularity of household coffee machines has grown. Additionally, coffee lovers are increasingly purchasing their beans online.

Water quality matters as much as the beans! To extract the most flavor out of your expensive grounds, use fresh, filtered water, and heat it to 195–205°F (90–96°C). Too hot makes coffee bitter; too cool makes it weak.
